Must Eat: Singapore

I worked in Singapore for a few months and I can honestly say it’s one of my favorite foodie paradise in Asia. It’s exploding with different cuisines from Indian to Malay and it’s like a sample platter of everything wonderful.

Here are my must-eats in Singapore:

1. Bah Kuh Teh

It’s a lot like pork stew but with a more distinct flavor. The broth is rich, spicy, and packed with garlicy flavors. They said it started as a poor man’s food but soon found its way even to the most high class restaurants around the city.

I went to Ng Ah Sio Pork Ribs Soup: 208 Rangoon Road, Hong Building for my first bowl but there are plenty of Bah Kuh Teh places all over.

2. Fried Carrot Cake

The Singapore Fried Carrot cake is made with eggs, preserved radish (chai poh) and white radish flour cake, which resembles a ‘white carrot’ and how the name comes about. If I’m not mistaken, this dish came from Malaysia. There are variants of this dish but I have yet to try them.

3. Chili Crabs

You can’t be in Singapore and not have their famous Chili Crabs. The 2 most popular styles of crab cooking in Singapore are with a sweet, spicy tomato-based chilli sauce, or with black pepper sauce. Chilli crabs are usually eaten along with fried mantao. Prepared to get your hands dirty because the only way to truly enjoy this is with your hands.

4. Laksa Noodles

I would make this my number one because of my obsession for noodles but that would be too biased.

This rich, thick, coconut milk based noodle soup is addictive, especially for lovers of all things spicy. You can have chicken or shrimp as the protein. Curry laksa is more predominant in Singapore.

I had the best bowl of laksa at Sungei Road Laksa: Blk 27 Jalan Berseh, #01-100

I would add more but I’ve curated them into these 5 dishes. I’ll probably make a separate blog for the 2nd batch of must-eats in SG. Perhaps explore street food.
